This is the glass noodle salad recipe of my mother and I could eat the whole salad bowl of it!
The first time I prepared it, it was not as good as mom's, but time after time I think I almost
got there ;)
What you need:
2 packs of Soeoen Laksa glass noodles
3-4 carrots
1 green, 1 red, 1 yellow paprika
1 big zucchini
2 eggplants
sunflower oil
dill, parsley, sault, black pepper, Maggi or soya sauce
(and a hot chili sauce if you like it spicy)
preparation:
-wash and grate the carrots
-wash and cut the rest of the vegetables into small cubes
-heat the vegetables in oil, season them with salt and pepper
(heat the vegetables seperately as they have different cooking time!)
- cook the glass noodles in abundant salted water for 2-3 minutes
(not longer otherwise they get mush!)
-drain the glass noodles and cut them (just cut them a few times with the
knife in the salad bowl, then it's much easier to stir them later on with the rest of the ingredients)
-season everything with dill, parsley, Maggi or soya sauce (and chili sauce if you like it spicy)
-mix it well (the easiest with two forks)
-ENJOY!
